Wild Violet Vinegar

Wild violets were picked from my backyard. Stems tossed. Cleaned but not rinsed.

Place violets in about 1 1/2 to 2 cups of white wine vinegar. After a few days strain the violets and discard them. What you are left with is a sweet-tasting vinegar for use in salad dressing recipes.
